Carpaccio of Beef

4 Thin slices beef fillet; (4 to 5)
Olive oil
1 Handful grated parmesan
1 Courgette
2 Egg yolks
1 Lemon; juice of

Freeze the beef for half an hour to make it easier to slice. Put some cling film on to a smooth surface. Place the beef slices on the film, cover with another piece of film and bash with a rolling pin until the beef is very thin.

Remove the cling film and arrange the beef slices on a plate. Season with salt and pepper and drizzle with olive oil.

Grate the courgette and place it in a bowl with the parmesan. Add the lemon juice and egg yolks, then season with olive oil, salt and pepper. Mix all the ingredients together.

Serve the courgette mixture on top of the beef.
