Chicken Fried Steak

2 lb Round steak, pounded to tenderize and cut into serving size pieces
2 ts Salt
2 ts Apple vinegar
2 c Water
Salt and pepper
Flour
Cooking oil
Cream Gravy:
2 tb Grease from frying pan
2 tb Flour
2 c Milk or cream

After tenderizing round steak, soak in mixture of 2 tsp salt, vinegar, and water for 2 hours. Dredge meat in salt and peppered flour. In a large cast iron skillet with hot cooking oil, brown meat until tender. Drain on paper towels and keep warm.

For Cream Gravy: Pour off all but 2 tabspoons grease from skillet. In a bowl or jar, combine the milk and flour and mix thoroughly. (If flour is not completely dissolved in milk, gravy will be lumpy.) Pour into skillet and stir constantly until thickened and heated. Yield: 4 to 6 servings
